A FURTHER STEP TOWARDS SUSTAINABILITY

Goodbye long supply chains! We started the pilot project at our Lübeck location back in 2021: In cooperation with the ambitious start-up Mana Farms, we installed an indoor farm that supplied our restaurant in Lübeck with fresh salad.

Now we are starting the rollout in our restaurants – you can already admire the beautifully designed farms in Berlin East Side, Erfurt, Flensburg, Hamburg Goldbekplatz, Leipzig and in Lübeck Altstadt.
Our goal is to be able to serve guests even fresher and thus healthier products in the future! In this way, we want to offer even better quality and further reduce both CO2 emissions and water consumption.
In general, microgreens are extremely healthy. It was possible to detect 4-40 times the amount of nutrients compared to the adult plants.

Since we do not separate the plants from the root until they reach the plate, this nutrient density is also preserved.

Indoorfarming Lübeck

Whether it’s lollo bionda, basil or mint – selected young plants thrive in the Mana Farm in a mobile canal system, i.e. in containers completely without soil and instead with a circulating nutrient solution. The particularly space-efficient system uses 95% less water than cultivation in the field.

We like it crisp: We are the first German system gastronomy to roll out our indoor farming concept. Following a test phase in Lübeck, the Leipzig site can now look forward to freshly harvested greenery. Together with the start-up Mana Farms, we are integrating our own microgreens farming system into the restaurant. In the future, guests will be able to watch seedlings of red radish and green daikon radish grow and be harvested by employees. And if you order one of the many delicious salad creations from our menu, you can directly convince yourself of the unbeatable fresh taste of the healthy topping!
